I like to cook. When I cook I don’t use a recipe, I usually make a dish several times until I have perfected it.
I would say that lasagna is my signature dish. As I haven’t been able to eat pasta this year I haven’t made it once.
It has been something I have really wanted for a while. I had the opportunity to have one while on holiday. However when it came to ordering it I didn’t feel I could have pasta so I ordered omelette instead. I also only wanted to have one that I made myself.
I decided that I really wanted to make one but I didn’t want to make it with any pasta in it. So I replaced it and used aubergines instead.
I have never used aubergines before. I hadn’t even tasted an aubergine. So I thought I was being quite daring making it.
I really didn’t know what to do with them. I ended up slicing them and putting them in the lasagna.
Even though I made it I was actually dreading eating it because I have never tried aubergines before and a lasagna can’t be that good without pasta in it.
We shared it with another family and I have to say it was delicious. You couldn’t even tell there was no pasta in it and the aubergines gave a really lovely flavour.
I think I will be using aubergines again.

I make Turkey Moussaka with turkey mince and use aubergines, I slice them and grill with spray oil and then layer them like you do with lasagne, I add cinnamon, oregano tomato purée and chicken stock to the mince with garlic and onion, then cover each layer with sliced aubergines and reduced fat mozzarella cheese. It’s really nice and great if you are trying to lose weight.
